Philip Harben was one of the first cooks to appear on television; his encyclopaedia includes definitions of cookery terms and recipes to illustrate them.
The dust jacket is rather careworn, badly scuffed on the edges, chipped and torn (as in the image) and bound with a 7.5 cm strip of sticky tape along the bottom front edge to repair a long tear from the spine across the front. There is also a split in the block towards the end of the book, between pages 478 and 479, exposing the webbing.
However, the text block is only slightly foxed on the edges, the colorful end papers illustrate handy measures for a dozen ingredients, the clear text and diagrams are a comprehensive guide to cookery, and the typically 1950s-style colour photographs are a garish delight! Charlotte Russe has never looked quite so scarlet.
