Cookery books today are full of inspiring photographs showing how the recipes detailed should appear once cooked - but in the early 1960s the housewife needed to use her imagination to visualise the finished result! This little book, issued in 1962, offered "exciting and exotic dishes from Paris - adapted and simplified for the American cook". The author's introduction gives the American neophyte a comprehensive history of the development of French cuisine, evidently designed to inspire the cook to attempt these unfamiliar dishes for the first time.

Colette Black was a cookery writer who specialised in European cuisine, notably French (Parisian and Provincial) and Italian.

Our copy of the book is showing its age somewhat externally, the cover being very grubby/stained and the spine torn at both top and bottom (but not detached). Inside, the half-title page has a faint mauve circular stamp mark at bottom left, and there is a tiny black half-circle mark near the bottom of the final page, but otherwise the binding is firm, there are no loose pages, and the text is clean throughout. There is a brownish stain to the top of the long edge of the text block, but the book is generally in good condition apart from the aforementioned minor defects.
