Every art or profession requires the skilful and proper use of the appropriate tools. The governing factors in choosing which cookery implements are: efficiency, ease of use, cost in relationship to usefulness and durability, excellence of design, and, occasionally, charm. Techniques for using the tools are shown whenever the following rules apply: where the way a tool is used is not obvious from its appearance; where, although the tool is familiar, it has unexpected uses - for example, using a rolling pin to shape the curved biscuits known as 'tuiles'; and where a tool can be used to demonstrate professional tricks of the trade.

This hardback 1985 edition is in a fair condition overall. It does not have a dustjacket. The pictorial boards are bound in a protective laminate which is coming away at the spine. The pages are yellowing slightly. The book is fully illustrated throughout with diagrams and pictures. For the amateur or the professional cook, this is likely to be a thoroughly absorbing volume.

We relocated in January 2016 to larger premises and are now able to offer a wider range of books and music (you can come and check out your musical choices in our listening booth and also find out a lot more about Oxfam's work.).
